Ingredients
For the cake
• 8 oz self-raising flour
• 150g icing sugar
• 4 eggs
• 5 measures of gin (any variety)
• 2 limes
• 8oz caster sugar
• 8oz butter or margarine
For the glaze
6 measures of gin
Juice from the limes
Few splashes of tonic water
150g icing sugar
For the icing
3 measures of gin
200g icing sugar
Few splashes vanilla essence
Splash of milk or cream
Slices of fresh lime to decorate
Method
1. Pre heat oven to 180c and grease square baking tray/tin.
2. Cream the butter and sugar together until light and fluffy – then beat in the eggs
3. Sift flour into mixture and fold into mixture.
4. Grate the zest of both limes and add into the mix, along with the about five shots of gin (I used a spirit measure) but this is approximately 125ml
5. Pour into a square baking tin and bake at 180C (170 for fan ovens) for about 30-35 minutes, or until you can slide a knife in and it comes out clean. Remove from oven and cool
6. Make the gin glaze by combining the icing sugar with the gin and the juice of the other lime and a splash of tonic, until the sugar dissolves
7. When the cake is cool, poke lots of holes in the top using a skewer or fork, and pour the glaze over the cake (there will be quite a lot of glaze, you might not need all of it – too much will make the cake soggy)
8. Leave the cake . The soak up the glaze, mix together the icing ingredients to make a thick but spreadable mixture, and smooth the icing over the cake. Decorate with fresh lime slices, leave to set and serve
This cake serves around eight people. I would not advise serving to children due to the alcohol content. Enjoy!
